Zesty Carrot and Sage Salad: A Fresh Twist on a Classic

Carrot Salad with Sage for 3 People

Ingredients:

  • 4 large carrots
  • 2-3 finely chopped pickled cucumbers
  • 1 tablespoon of golden raisins
  • 6-7 fresh sage leaves (keep 2 for later)
  • Juice of 1 small orange
  • Salt
  • Black pepper
  • 2 tablespoons olive oil

Instructions:

  1. Using a vegetable peeler, cut the carrots into long, thin strips.
  2. Once the carrots are ready, add the pickled cucumbers, fresh sage leaves (keep two aside for later), and the golden raisins.
  3. In a bowl, mix together the orange juice, olive oil, the remaining sage leaves, salt, and pepper.
