Carrot Salad with Sage for 3 People
Ingredients:
- 4 large carrots
- 2-3 finely chopped pickled cucumbers
- 1 tablespoon of golden raisins
- 6-7 fresh sage leaves (keep 2 for later)
- Juice of 1 small orange
- Salt
- Black pepper
- 2 tablespoons olive oil
Instructions:
- Using a vegetable peeler, cut the carrots into long, thin strips.
- Once the carrots are ready, add the pickled cucumbers, fresh sage leaves (keep two aside for later), and the golden raisins.
- In a bowl, mix together the orange juice, olive oil, the remaining sage leaves, salt, and pepper.
- Pour the dressing over the salad and mix well before serving.
